Primavera Pasta and Clamato. Prepare to love. OMG, this pasta is amazing and it has Clamato on it.
Ingredients
- PASTA
- 8 cups (1 lb.) linguini pasta
- 3 tablespoons olive oil
- ½ medium red onion, diced (yes, it has to be red, like Clamato)
- 2 cloves garlic, minced
- 1 medium carrot, peeled, sliced thin
- 1 package (9 oz.) frozen green beans, French cut, thawed
- 1 package (9 oz.) frozen broccoli, thawed
- 1 lb. uncooked shrimp, peeled and deveined (optional)
- ¼ cup basil, chopped
- SAUCE
- 1½ cups of your favorite Clamato®
- 1 can (12 oz.) evaporated milk
- 1 tablespoon cornstarch
- 4 oz. cream cheese, cubed
- ¼ cup Romano cheese, shredded
Instructions
- Cook pasta according to package instructions.
- In a saucepot over medium heat, combine Clamato, evaporated milk, and cornstarch.
- Cook 8-10 minutes. Stir frequently.
- Reduce heat, add Romano and cream cheeses.
- Stir until both cheeses have melted and sauce is smooth; keep warm.
- Pour yourself a glass of Clamato; enjoy.
- In a large sauté pan, over medium-high heat, heat oil. Add onion, garlic, and carrot; cook until tender, 5-8 minutes.
- Add green beans, broccoli, and shrimp; cook 5 more minutes.
- Drain pasta, stir into cream sauce, add vegetables.
- Sprinkle with chopped basil.
- Serve with French bread or garlic bread.
