Clamato Grilled Chicken With Honey-Ancho BBQ Sauce

Ingredients
Chicken
- 8 chicken breasts, boneless, skinless
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose seasoning
Sauce
- 3 tablespoons vegetable oil
- ½ medium white onion, minced
- 1 clove garlic, minced
- 2 cups Clamato® Tomato Cocktail
- 5 tablespoons tomato paste
- ½ cup white vinegar
- ¼ cup honey
- ½ cup white sugar
- 4 teaspoons ancho chile powder
- 1 teaspoon salt
- ½ teaspoon coriander, ground
- ½ teaspoon ginger ground
- ½ teaspoon black pepper
Directions
- Preheat grill to 375° F (place grill on high for 10 minutes with lid closed), then reduce to medium.
- In a saucepot, heat oil over medium heat, add onions and garlic cover and cook for 6-8 minutes.
- Then add Clamato, tomato paste, white vinegar, honey, sugar, ancho chile powder, salt, coriander, ginger and black pepper; bring to boil. Reduce heat to medium-low and cook for 12-15 minutes; keep warm.
- Place chicken breast in a bowl, add oil and seasoning; toss to coat well.
- Place chicken breast on grill, cook for 5-7 minutes then flip, brush with BBQ sauce, cook an additional 5-7 minutes, flip and brush with BBQ sauce (chicken is cooked when meat is fork tender).
- Remove from grill and place cooked chicken on platter.
- Serve with remaining sauce with rice and vegetables.
