Clamato Marinated Roasted Chicken

Ingredients

  • 1 whole chicken, neck and giblets removed
  • 3 cups Clamato Chicken and Seafood Marinade
  • 1 medium onion, sliced
  • 2 garlic cloves
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup water
  • 1 cup Clamato® Tomato Cocktail
  • Salt & pepper to taste

Directions

  1. In a large zipper-seal plastic bag, place chicken with Clamato Chicken and Seafood Marinade, marinate chicken for 3 hours or refrigerate overnight.
  2. Preheat oven to 350° F.
  3. Place onion, garlic, carrot and celery on bottom of a roasting pan.
  4. Remove chicken from marinade and place on top of vegetables; pour marinade over all, add water and Clamato.
  5. Roast chicken for 60 to 75 minutes (chicken is cooked when meat is fork tender).
  6. Remove chicken from oven and allow to rest 8-10 minutes before cutting.
  7. Blend vegetables and liquid from the roasting pan in a blender or food processor, until puree, add salt and pepper to taste.
  8. Cut roasted chicken into 8 pieces and serve with Clamato® roasted vegetable sauce.
