Clamato Beef Enchiladas

Ingredients

Filling

  • 3 tablespoons vegetable oil
  • 1 lb ground beef
  • 1 tablespoon salt
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • 1package (8 oz.) shredded Cheddar cheese

Sauce

  • 2 tablespoons vegetable oil
  • 1 fresh jalapeño, chopped
  • 1 medium onion, chopped
  • 2 teaspoons salt
  • 2 teaspoons cumin ground
  • 1 teaspoon coriander, ground
  • 3 cups Clamato® Tomato Cocktail
  • 4 tablespoons tomato paste
  • ½ cup water
  • 1 package (8 oz.) shredded Cheddar and Monterey Jack shredded cheese
  • 1 dozen corn tortillas

Directions

  1. In a large sauté pan, heat oil over medium-high heat, add ground beef, salt, onion powder, garlic powder and black pepper; mix well.
  2. When beef is cooked, remove mixture from pan; keep warm.
  3. In the sauté pan used to brown beef heat oil, add onion, garlic and jalapeño; sauté for 10 minutes.
  4. Add salt, cumin, coriander, Clamato, tomato paste and water; reduce heat and simmer for 15 minutes, stirring a few times.
  5. Roll up each tortilla with ground beef and cheese; place in a lightly greased baking dish and spoon tomato sauce over; cover with aluminum foil and bake at 350° for 10 minutes.
  6. Uncover and sprinkle with shredded Cheddar and Monterey cheese; bake 5 minutes longer or until cheese melts. Serve immediately.
