Clamato Beef Enchiladas

Ingredients
Filling
- 3 tablespoons vegetable oil
- 1 lb ground beef
- 1 tablespoon salt
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon black pepper
- 1package (8 oz.) shredded Cheddar cheese
Sauce
- 2 tablespoons vegetable oil
- 1 fresh jalapeño, chopped
- 1 medium onion, chopped
- 2 teaspoons salt
- 2 teaspoons cumin ground
- 1 teaspoon coriander, ground
- 3 cups Clamato® Tomato Cocktail
- 4 tablespoons tomato paste
- ½ cup water
- 1 package (8 oz.) shredded Cheddar and Monterey Jack shredded cheese
- 1 dozen corn tortillas
Directions
- In a large sauté pan, heat oil over medium-high heat, add ground beef, salt, onion powder, garlic powder and black pepper; mix well.
- When beef is cooked, remove mixture from pan; keep warm.
- In the sauté pan used to brown beef heat oil, add onion, garlic and jalapeño; sauté for 10 minutes.
- Add salt, cumin, coriander, Clamato, tomato paste and water; reduce heat and simmer for 15 minutes, stirring a few times.
- Roll up each tortilla with ground beef and cheese; place in a lightly greased baking dish and spoon tomato sauce over; cover with aluminum foil and bake at 350° for 10 minutes.
- Uncover and sprinkle with shredded Cheddar and Monterey cheese; bake 5 minutes longer or until cheese melts. Serve immediately.
